Default Mojo-marinated Grilled Beef Shortribs

2 lbs beef shortribs
2 lemons, juiced
2 limes, juiced
2 oranges, juiced
1 jalapeno (or serrano if you like it hot), seeded
1/2 small onion
3 larges cloves garlic...or more to taste
1/4 cup Extra virgin olive oil
salt and pepper to taste

In a blender or food processor, combine citrus juices, garlic, chili, and onion. Process till smooth, and while running, slowly drizzle oil to produce emulsion. Add salt and pepper.

I usually use a large ziplock freezer bag, pour marinade in, and add beef. Let marinate at least 4 hours to overnight. The longer, the better.

I slap em on a hot charcoal grill till they are medium-rare, about 4 mins a side.
