Creamy Basil Chicken
1 lb Chicken breast skinned, boned and halved
1/4 cup milk 1/4 cup bread crumbs
1/2 cup chicken broth 1 cup heavy cream
4 oz of sliced pimentos or roasted sweet red peppers
1/2 cup grated parmesan 1/4 cup fresh chopped basil
black pepper
Rinse breasts in cold water and pat dry. Dredge the breasts in the milk then in the bread crumbs. In a lg. skillet cook the breasts in butter over med. heat until lightly browned or juices run clear. Remove from heat and keep warm.
Add the chicken broth to the skillet bring to boil while stirring to loosen browned bits from the skillet. Stir in the cream and pimentos or peppers and stir, allow to cook for a minute or two. Reduce heat and add the cheese, basil and a large dash of black pepper. Plate warm chicken breasts and serve sauce over top. Top off with a leaf or two of basil and some fresh grated parmesan
Angle hair pasta makes a great side dish.
